Ingredients

  • 4 pieces Gluten-free tortillas
  • 1 pound Ground beef
  • 1 tablespoon Olive oil
  • 1 medium Onion, diced
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Cumin powder
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 1 cup Black beans, drained and rinsed
  • 1 cup Shredded cheddar cheese
  • 1 cup Salsa
  • 15 ounces Enchilada sauce, gluten-free
  • 0.5 cup Sour cream
  • 0.25 cup Fresh cilantro, chopped

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until soft, about 5 minutes.

Step 3

Add the minced garlic to the skillet and sauté for an additional minute until fragrant.

Step 4

Add ground beef to the skillet. Cook until browned, about 7-10 minutes, breaking up the meat with a spatula.

Stir in cumin powder, chili powder, and salt. Mix well to combine.

Add black beans to the skillet with the beef mixture. Stir and continue to cook for another 3-4 minutes. Remove from heat.
