Ingredients

  • 200 grams Fresh shrimp, peeled and deveined
  • 200 grams Gluten-free all-purpose flour
  • 50 grams Tapioca starch
  • 1 teaspoon Xanthan gum
  • 1 teaspoon Salt
  • 180 milliliters Boiling water
  • 1 tablespoon Sesame oil
  • 2 stalks Spring onions, finely chopped
  • 1 teaspoon Fresh ginger, grated
  • 1 tablespoon Light soy sauce (gluten-free)
  • 1 teaspoon Rice vinegar
  • 0.5 teaspoon White pepper
  • 1 small Carrot, finely grated

Directions

Step 1

Mix the gluten-free all-purpose flour, tapioca starch, and xanthan gum in a large bowl.

Step 2

Gradually pour in the boiling water while stirring to combine the dry ingredients until a dough forms.

Step 3

Transfer the dough onto a lightly floured surface and knead until smooth, about 5 minutes. Cover it with a damp cloth to prevent drying.

Step 4

Chop the shrimp finely and place in a mixing bowl. Add the spring onions, ginger, sesame oil, gluten-free soy sauce, rice vinegar, grated carrot, white pepper, and salt. Mix thoroughly.

Step 5

Divide the dough into small balls, each weighing about 15 grams. Roll each ball into a thin circle with a rolling pin.

Step 6

Place about 1 teaspoon of the shrimp mixture in the center of each circle.

Step 7

Fold the edges of the dough circle over the filling to form a half-moon shape. Pinch the edges to seal, making sure no filling escapes.

Step 8

Prepare a steamer lined with parchment paper or cabbage leaves to prevent sticking.

Step 9

Arrange the dim sum in the steamer with some space between each piece and steam over medium-high heat for 10-12 minutes, or until the dumplings are translucent and the shrimp is cooked through.

Step 10

Serve the gluten-free shrimp dim sum warm with your choice of dipping sauce.
