Ingredients

  • 1.5 cups Gluten-free all-purpose flour blend
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter, softened
  • 0.75 cup Granulated sugar
  • 0.25 cup Brown sugar, packed
  • 1 teaspoon Vanilla extract
  • 1 unit Large egg
  • 0.5 cup Sesame seeds
  • 0.5 teaspoon Xanthan gum (omit if included in the flour blend)

Directions

Step 1

Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the gluten-free all-purpose flour, baking powder, salt, and xanthan gum if using. Set aside.

Step 3

In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.

Step 4

Beat in the vanilla extract and the egg until well combined.

Step 5

Gradually add the dry ingredient mixture to the wet ingredients, beating on low speed until just combined.

Step 6

Fold in the sesame seeds using a spatula or wooden spoon.

Step 7

Scoop tablespoon-sized amounts of dough and roll them into balls. Place them on the prepared baking sheets about 2 inches apart.

Step 8

Gently flatten each ball with your fingers to about 1/2 inch thick.

Step 9

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.

Step 10

Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
