Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 1 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Xanthan gum
  • 8 tablespoons Cold unsalted butter
  • 2 Large eggs
  • 0.5 cup Heavy cream
  • 1 teaspoon Vanilla extract
  • 1 Zest of one lemon
  • 0.5 cup Optional: Dried currants or raisins

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the gluten-free flour, sugar, baking powder, salt, and xanthan gum.

Step 3

Cut the cold butter into small cubes and add it to the flour mixture.

Step 4

Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles pea-sized crumbs.

Step 5

In a separate bowl, whisk together the eggs, heavy cream, and vanilla extract. Add the lemon zest to this mixture.

Step 6

Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold the wet ingredients into the dry until just combined. Do not overmix.

Step 7

If using, gently fold in the dried currants or raisins.

Step 8

Turn the dough out onto a lightly floured surface. Pat the dough into a circle about 3/4-inch thick.

Step 9

Use a sharp knife to cut the circle into 8 wedges.

Step 10

Transfer the wedges to the prepared baking sheet, spacing them about 2 inches apart.

Step 11

Brush the tops lightly with a bit of heavy cream for a golden finish.

Step 12

Bake for 18-20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.

Step 13

Remove from the oven and let cool on a wire rack for a few minutes before serving. Enjoy warm or at room temperature.
