Ingredients

  • 15 pieces Dried red chilies
  • 1 cup Water
  • 4 tablespoons Garlic, finely chopped
  • 2 tablespoons Ginger, finely chopped
  • 0.25 cup Vegetable oil
  • 2 tablespoons Gluten-free soy sauce
  • 2 tablespoons Vinegar
  • 1 tablespoon Sugar
  • 1 teaspoon Salt

Directions

Step 1

De-stem the dried red chilies and soak them in 1 cup of hot water for about 20 minutes until they soften.

Step 2

Once the chilies are soft, drain them and blend into a smooth paste using a little of the soaking water if necessary. Set aside.

Step 3

Heat 1/4 cup of vegetable oil in a pan over medium heat.

Step 4

Add the finely chopped garlic and ginger, sautéing until they are fragrant and start to lightly brown, around 3 minutes.

Step 5

Stir in the chili paste and cook for another 5 minutes, allowing the mixture to thicken slightly while stirring frequently.

Add the gluten-free soy sauce, vinegar, sugar, and salt to the chili mixture and mix thoroughly.

Continue to cook the sauce for an additional 10 minutes on low heat, stirring occasionally until the oil starts to separate from the sauce.
