Ingredients

  • 4 pieces Gluten-free tortillas
  • 12 ounces Gluten-free breakfast sausage
  • 6 pieces Large eggs
  • 0.25 cup Milk
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 cup Cheddar cheese, shredded
  • 1 piece Red bell pepper, diced
  • 2 pieces Green onions, chopped
  • 1 tablespoon Olive oil
  • 0.5 cup Salsa

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil. Crumble the gluten-free breakfast sausage into the skillet and cook until browned and cooked through, about 8-10 minutes. Remove sausage from the skillet, drain off excess fat, and set aside.

Step 2

In a medium mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Step 3

In the same skillet, add the diced red bell pepper and cook until softened, about 3-4 minutes.

Step 4

Reduce the heat to low and pour the egg mixture over the cooked peppers. Stir gently to scramble until the eggs are just set, about 3 minutes.

Step 5

Stir in the cooked sausage and remove the skillet from heat.

Step 6

Warm the gluten-free tortillas in the microwave for about 10-15 seconds to make them pliable.

Step 7

To assemble each burrito, place a quarter of the scrambled egg and sausage mixture onto the center of a tortilla. Top with 1/4 cup of shredded cheddar cheese and some chopped green onions.

Step 8

Roll up each tortilla, folding in the sides as you go to secure the filling. Repeat for the remaining tortillas and filling.

Step 9

Serve the burritos warm with a side of salsa.
