Ingredients

  • 200 grams Gluten-free all-purpose flour
  • 100 grams Unsalted butter
  • 50 grams Powdered sugar
  • 1 teaspoon Xanthan gum
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Milk
  • 20 grams Additional powdered sugar for dusting

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the gluten-free flour, xanthan gum, baking powder, and salt.

Step 3

In a separate bowl, beat the unsalted butter and powdered sugar together until light and fluffy.

Step 4

Add the egg and vanilla extract to the butter mixture, and continue to beat until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until a dough begins to form.

Step 6

Add the milk gradually, just enough to help the dough come together without being too sticky.

Step 7

Press the dough into a flat disc, wrap it in plastic wrap, and chill in the refrigerator for about 20 minutes.

Step 8

Once chilled, roll the dough out on a lightly floured surface to about a 1/4 inch thickness.

Step 9

Cut into desired shapes and carefully transfer to the prepared baking sheet.

Step 10

Bake in the preheated oven for 12 to 15 minutes, or until the edges are just starting to turn golden.

Step 11

Remove from oven and let cool on a wire rack.

Step 12

Once cooled, generously dust the pastries with additional powdered sugar before serving.
