Ingredients

  • 200 grams Gluten-free all-purpose flour
  • 150 grams Unsalted butter (cold, cubed)
  • 50 grams Granulated sugar
  • 1 pinch Salt
  • 60 ml Cold water
  • 1 large Egg yolk
  • 100 grams Pistachios (shelled and unsalted)
  • 50 grams Almond flour
  • 75 grams Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 large Egg white
  • 1 teaspoon Lemon zest

Directions

Step 1

In a large bowl, combine the gluten-free flour, granulated sugar, and a pinch of salt. Add the cold, cubed unsalted butter.

Step 2

Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse breadcrumbs.

Step 3

Add the cold water and egg yolk to the mixture. Stir with a fork until it starts to come together.

Step 4

Turn the dough onto a lightly floured surface and knead gently until it forms a ball. Wrap it in plastic wrap and refrigerate for 30 minutes.
