Ingredients

  • 150 grams Raw unsalted pistachios
  • 100 grams Gluten-free all-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 115 grams Unsalted butter, softened
  • 150 grams Granulated sugar
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 120 milliliters Milk

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 9-inch round cake pan and line the bottom with parchment paper.

Step 2

In a food processor, pulse the pistachios until they are finely ground. Be careful not to over-process them into a paste.

Step 3

In a medium bowl, whisk together the ground pistachios, gluten-free flour, baking powder, and salt. Set aside.

Step 4

In a large bowl, cream the softened butter and sugar together using an electric mixer until light and fluffy, approximately 3-4 minutes.

Step 5

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.

Step 6

Gradually add the dry ingredients to the creamed mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.

Step 7

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 8

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before serving.
