Directions

Step 1

In a large mixing bowl, combine 180g gluten-free all-purpose flour, 1 tsp xanthan gum, 1 tbsp baking powder, 0.5 tsp salt, and 50g granulated sugar and mix thoroughly.

Cut in 80g unsalted butter into the dry ingredients until the mixture resembles coarse crumbs.

Add 120ml whole milk, 1 egg, and 1 tsp vanilla extract to the bowl, mixing until a dough forms.

Turn the dough onto a floured surface and knead gently until smooth, about 5 minutes. If the dough is too sticky, add a bit more gluten-free flour.
