  • 0.5 tsp Black pepper
  • 1 tsp Paprika
  • 0.5 tsp Smoked paprika
  • 0.25 tsp Cayenne pepper
  • 3 Garlic cloves
  • 240 ml Tomato sauce
  • 15 ml White wine vinegar
  • 10 ml Honey
  • 2 tbsp Parsley

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Peel and cut the potatoes into 1-1.5 inch cubes.

Step 3

Place the potato cubes in a large bowl, add 30 ml of olive oil, salt, and black pepper, then mix well to coat the potatoes evenly.

Step 4

Arrange the potatoes in a single layer on a baking sheet lined with parchment paper.

Step 5

Bake in the preheated oven for 25-30 minutes or until the potatoes are golden and crispy, flipping halfway through the baking time.

Step 6

While the potatoes are baking, finely mince the garlic cloves.

Step 7

In a small saucepan, heat the remaining 30 ml of olive oil over medium heat.

Step 8

Add the minced garlic to the oil and sauté for about 1 minute until fragrant.

Step 9

Stir in the paprika, smoked paprika, and cayenne pepper, and cook for another 30 seconds.

Step 10

Add the tomato sauce and bring the mixture to a simmer.

Step 11

Reduce the heat to low and stir in the white wine vinegar and honey, allowing the sauce to simmer gently for about 10 minutes or until it thickens slightly.

Step 12

Remove the sauce from heat and taste, adjusting seasoning if necessary.

Step 13

Once the potatoes are done baking, transfer them to a serving dish.

Step 14
