Ingredients

  • 250 grams Gluten-free rice noodles
  • 200 grams Chicken breast, boneless and skinless
  • 1 medium Carrot, julienned
  • 100 grams Green beans, sliced diagonally
  • 1 medium Red bell pepper, sliced
  • 3 cloves Garlic, minced
  • 1 small Onion, diced
  • 60 ml Gluten-free soy sauce
  • 2 tablespoons Oyster sauce (gluten-free if needed)
  • 250 ml Chicken broth, low sodium
  • 1 tablespoon Sesame oil
  • 2 tablespoons Vegetable oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 stalks Green onions, chopped
  • 1 whole Lemon, sliced into wedges

Directions

Step 1

Place the rice noodles in a bowl and cover with hot water. Let them soak for about 10 minutes until softened, then drain and set aside.

Step 2

Slice the chicken breast into thin strips. In a large pan or wok over medium heat, add the vegetable oil.

Once hot, add the garlic and onion. Sauté for 2-3 minutes until the onion becomes translucent.

Add the chicken strips to the pan. Cook until the chicken is browned and fully cooked, about 5-7 minutes.
