Ingredients

  • 250 grams Chicken breast, thinly sliced
  • 60 ml Gluten-free soy sauce
  • 3 cloves Garlic, minced
  • 1 medium Onion, sliced
  • 1 medium Carrot, julienned
  • 150 grams Cabbage, shredded
  • 100 grams Green beans, sliced
  • 480 ml Chicken broth
  • 2 tablespoons Vegetable oil
  • 2 pieces Lemon wedges
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Soak the rice noodles in warm water for about 10 minutes or until they are slightly soft, then drain and set aside.

Step 2

In a large pan or wok, heat the vegetable oil over medium-high heat.

Step 3

Add the minced garlic and sliced onion. Sauté until the onion is translucent and the garlic is fragrant, about 2 minutes.

Step 4

Add the thinly sliced chicken breast to the pan and cook for 5-7 minutes, or until the chicken is no longer pink and cooked through.

Step 5

Stir in the carrots, green beans, and cabbage, and cook for another 3-4 minutes until the vegetables are tender-crisp.

Step 6

Pour in the chicken broth and gluten-free soy sauce. Stir well to combine.

Step 7

Add the pre-soaked rice noodles to the pan, tossing everything together to ensure the noodles are evenly coated with the sauce and ingredients.

Step 8

Season with salt and black pepper to taste.

Step 9

Continue cooking over low heat until the noodles have absorbed most of the liquid and are fully cooked, approximately 5 minutes.

Step 10

Transfer the pancit bihon to a serving platter.

Step 11

Garnish with lemon wedges on the side, which can be squeezed over individual servings for an extra zesty kick before eating.
