Ingredients

  • 1 cup Besan (gram flour)
  • 0.5 cup Rice flour
  • 0.5 cup Hot water
  • 0.5 teaspoon Ground ajwain (carom seeds)
  • 0.25 teaspoon Ground turmeric
  • 0.5 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Asafoetida (hing)
  • 2 tablespoons Ghee or butter
  • 3 cups Oil for deep frying

Directions

Step 1

In a large mixing bowl, combine besan, rice flour, ground ajwain, ground turmeric, chili powder, salt, and asafoetida.

Step 2

Add melted ghee or butter to the dry ingredients and mix thoroughly until the mixture resembles breadcrumbs.

Step 3

Gradually add hot water, a little at a time, and knead into a soft, non-sticky dough.

Step 4

Once the dough is ready, place a portion of it into a murukku maker/set with a fine omapodi disc fitted.

Step 5

Heat oil for deep frying in a large pan over medium heat until a small piece of dough dropped in comes up quickly and sizzles.

Step 6

Carefully press the murukku maker over the hot oil, releasing spirals of the dough directly into the oil.

Step 7

Fry until the omapodi is golden brown and crispy, turning occasionally to ensure even cooking.

Step 8

Remove the omapodi with a slotted spoon and drain on paper towels to remove excess oil.

Step 9

Repeat the process for the remaining dough.

Step 10

Once cooled completely, break or crumble the omapodi into smaller pieces and store in an airtight container.
