Ingredients

  • 2 tablespoons Butter or vegan butter
  • 1 teaspoon Cumin seeds
  • 1 tablespoon Sesame seeds
  • 0.5 teaspoon Asafoetida (Hing)
  • 1 teaspoon Salt
  • 1 cup Water
  • 4 cups Vegetable oil (for frying)

Directions

Step 1

In a large mixing bowl, combine the rice flour, chickpea flour, sesame seeds, cumin seeds, asafoetida, and salt.

Step 2

Add the butter to the dry ingredients and mix thoroughly until the butter is well incorporated, resulting in a crumbly mixture.

Step 3

Pour in water gradually, stirring with a spoon or your hands, to form a smooth but stiff dough. The dough should be pliable but not sticky.

Step 4

Heat vegetable oil in a deep frying pan over medium heat. The oil needs to be hot enough for frying.

Step 5

Meanwhile, fill a murukku maker or a piping bag fitted with a star nozzle with the dough.

Step 6

Carefully press out coiled circular shapes onto a small greased plate or directly into the hot oil in the frying pan. If using a plate, slide the murukku gently into the hot oil.

Step 7

Fry the murukku in batches, ensuring not to overcrowd the pan, for 4-5 minutes or until they turn golden brown and crispy.

Step 8

Using a slotted spoon, remove the murukku from the oil and drain them on a paper towel to remove excess oil.

Step 9
