  • 10 whole lemongrass stalks
  • 2 tablespoons coconut oil
  • 3 medium shallots
  • 3 whole garlic cloves
  • 1 whole red chili
  • 3 whole kaffir lime leaves
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 0.5 teaspoon black pepper

Directions

Step 1

Start by cutting the chicken breast into chunks. Use a food processor to blend the chicken until it turns into a smooth paste.

Step 2

In a separate food processor, combine shallots, garlic cloves, and red chili. Blend until you achieve a fine paste.

In a mixing bowl, combine the chicken paste with coconut milk, the shallot-chili paste, salt, sugar, black pepper, turmeric powder, and coriander powder. Mix thoroughly until well incorporated.
