Ingredients

  • 300 g Boneless chicken breast
  • 300 g Beef sirloin
  • 1 medium Red bell pepper
  • 1 medium Yellow bell pepper
  • 1 medium Zucchini
  • 1 large Red onion
  • 4 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 3 Garlic cloves
  • 2 teaspoons Dried oregano
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Gluten-free soy sauce
  • 2 tablespoons Fresh parsley, chopped
  • 12 Wooden or metal skewers

Directions

Step 1

Cut the chicken and beef into uniform 1-inch cubes.

Step 2

In a large bowl, mix together the olive oil, lemon juice, minced garlic, dried oregano, ground cumin, smoked paprika, salt, black pepper, and gluten-free soy sauce to create a marinade.

Step 3

Add the chicken and beef cubes to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes to 1 hour for optimal flavor absorption.

Step 4

While the meat is marinating, chop the red and yellow bell peppers, zucchini, and red onion into bite-sized pieces.

Step 5

Preheat your grill to medium-high heat.

Step 6

Thread the marinated chicken, beef, and prepared vegetables onto skewers, alternating between meat and vegetables.

Step 7

Place the skewers onto the preheated grill. Cook for about 8-10 minutes on each side, turning occasionally, until the chicken and beef are cooked thoroughly and the vegetables are tender.

Step 8

Once cooked, remove the skewers from the grill. Let them rest for a couple of minutes.

Step 9

Garnish the kebabs with freshly chopped parsley before serving.

Step 10

Serve immediately with a side of your favorite gluten-free dipping sauce or salad.
