  • 2 cups Frozen mixed berries

  • 2 tablespoons Cornstarch
  • 1 tablespoon Lemon juice
  • 1 Egg (beaten, for egg wash)
  • 2 tablespoons Coarse sugar (for sprinkling)

Directions

Step 1

In a bowl, whisk together the gluten-free flour blend, xanthan gum, and salt.

Cut the cold butter into small cubes and add to the flour mixture. Using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs.

Gradually add the ice water, one tablespoon at a time, mixing until the dough holds together. Do not overwork it.

Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
