Ingredients

  • 1 cup gluten-free all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup granulated sugar
  • 0.5 cup buttermilk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 large egg
  • None vegetable oil (for greasing the donut pan)
  • None powdered sugar or cinnamon sugar (optional for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a mini donut pan with vegetable oil.

Step 2

In a medium-sized bowl, sift together the gluten-free all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.

Step 3

In a separate large bowl, whisk together the granulated sugar, buttermilk, melted butter, vanilla extract, and egg until well combined.

Step 4

Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to over-mix, as this can make the donuts tough.

Step 5

Use a piping bag or a small spoon to fill each cavity of the mini donut pan about two-thirds full with the batter.

Step 6

Bake the donuts in the preheated oven for 8-10 minutes, or until they are golden brown and a toothpick inserted into the center comes out clean.

Step 7

Remove the donuts from the oven and allow them to cool in the pan for about 5 minutes. Then gently transfer them to a wire rack to cool completely.

Step 8

Once cooled, optionally dust the mini donuts with powdered sugar or toss them in cinnamon sugar. Serve immediately and enjoy!
