Ingredients

  • 240 ml Water
  • 60 g Unsalted butter
  • 1 pinch Salt
  • 1 tsp Vanilla extract
  • 125 g Gluten-free all-purpose flour
  • 2 Large eggs
  • 1 L Vegetable oil
  • 100 g Granulated sugar
  • 1 tsp Ground cinnamon

Directions

Step 1

In a medium saucepan, combine water, unsalted butter, and a pinch of salt. Bring to a boil over medium heat, stirring occasionally.

Step 2

Remove the saucepan from heat and stir in the vanilla extract.

Step 3

Add the gluten-free all-purpose flour to the saucepan and stir quickly with a wooden spoon until the dough comes together and forms a smooth ball.

Step 4

Transfer the dough to a large mixing bowl and let it cool slightly, about 5 minutes.

Step 5

Add the eggs one at a time, beating well with a hand mixer or wooden spoon after each addition, until the mixture is smooth and shiny.

Step 6

Heat the vegetable oil in a deep, heavy-bottomed pot or deep fryer to about 180°C (350°F).

Step 7

Spoon the dough into a piping bag fitted with a large star tip.

Step 8

Carefully pipe 3- to 4-inch strips of dough into the hot oil. Use scissors or a knife to cut the dough when reaching desired length.

Step 9

Fry the churros in batches, turning occasionally, until golden brown and crispy, about 4-5 minutes per batch.

Step 10

Remove churros with a slotted spoon and drain on paper towels.

Step 11

In a shallow dish, mix granulated sugar and ground cinnamon.

Step 12

Roll the warm churros in the cinnamon sugar mixture until evenly coated and serve immediately.
