Ingredients

  • 2 cups Gram flour (besan)
  • 0.5 cup Rice flour
  • 0.75 cup Water
  • 1 teaspoon Salt
  • 0.5 teaspoon Carom seeds (ajwain)
  • 2 tablespoons Ghee (or vegetable oil for vegan)
  • 1 medium Brinjal (eggplant)
  • 2 medium Tomatoes
  • 2 medium Potatoes
  • 2 pieces Green chilies
  • 1 inch, grated Ginger
  • 3 cloves, minced Garlic
  • 0.25 cup, chopped Coriander leaves
  • 1 tablespoon Lemon juice
  • 1 tablespoon Mustard oil

Directions

Step 1

In a large bowl, combine gram flour and rice flour. Add salt, carom seeds, and 1 tablespoon ghee (or oil).

Step 2

Gradually pour water into the flour mixture and knead into a firm dough. Cover and let it rest for 20 minutes.

Step 3

Preheat the oven to 375°F (190°C).

Step 4

Divide the dough into equal-sized balls (about 10-12). Flatten each ball slightly.

Step 5

Place the littis on a baking tray lined with parchment paper. Bake them for 20-25 minutes until golden brown, flipping halfway through.

Step 6

Meanwhile, pierce the brinjal, tomatoes, and potatoes with a fork and roast them over an open flame or in the oven until charred and cooked through.

Once roasted, peel the skin off the brinjal, tomatoes, and potatoes. Mash them together in a bowl.

Add green chilies, ginger, garlic, chopped coriander leaves, lemon juice, and mustard oil to the mashed mixture. Mix well to make the choka.

Serve the roasted litti hot with the prepared choka.
