Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 0.5 teaspoons Xanthan gum
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Sea salt
  • 0.75 cup Unsalted butter, cold and cubed
  • 3 tablespoons Ice-cold water
  • 1 large Egg yolk
  • 1 teaspoon Vanilla extract
  • 0.5 cup Jam or fruit preserve (flavor of your choice)
  • 1 tablespoon Milk (for brushing)
  • 1 tablespoon Powdered sugar (optional for dusting)

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the gluten-free all-purpose flour, xanthan gum, sugar, baking powder, and sea salt.

Step 3

Add the cold, cubed butter to the flour mixture, using a pastry cutter or your hands to blend until the mixture resembles coarse crumbs.

Step 4

In a separate bowl, whisk together the ice-cold water, egg yolk, and vanilla extract.

Step 5

Gradually add the wet ingredients to the dry mixture, stirring until the dough comes together and is slightly sticky.

Step 6

Lightly dust your work surface with gluten-free flour and gently knead the dough for about a minute until smooth.

Step 7

Roll the dough out to about 1/8-inch thickness and cut into 4-inch squares using a sharp knife or pastry cutter.

Step 8

Place a teaspoon of jam in the center of each square.

Step 9

Fold one corner of the square over to the opposite corner to form a triangle. Press the edges together with a fork to seal.

Step 10

Arrange the pastries on the prepared baking sheet, about 2 inches apart.

Step 11

Lightly brush the tops of the pastries with milk.

Step 12

Bake in preheated oven for 12-15 minutes, or until the pastries are golden and firm.

Step 13

Remove from oven and transfer to a wire rack to cool slightly.

Step 14

Optionally, dust the pastries with powdered sugar before serving.
