Ingredients

  • 300 grams gluten-free all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoons ground cinnamon
  • 0.5 teaspoons salt
  • 100 grams unsalted butter, at room temperature
  • 150 grams granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 60 ml milk

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a medium-sized bowl, whisk together the gluten-free flour, baking powder, cinnamon, and salt. Set aside.

Step 3

In a large mixing bowl, cream together the butter and sugar until light and fluffy, about 3-4 minutes using an electric mixer.

Step 4

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.

Gradually add the flour mixture to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
