Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 1 tablespoon Tapioca starch
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoon Salt
  • 0.75 cup Boiling water
  • 2 tablespoons Vegetable oil
  • 1 pound Ground pork
  • 1 cup Green cabbage, finely chopped
  • 3 pieces Green onions, finely sliced
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 2 tablespoons Tamari (gluten-free soy sauce)
  • 1 tablespoon Sesame oil
  • 0.25 teaspoon Black pepper
  • 0 Water for sealing wrappers, as needed
  • 0.5 cup Water for steaming

Directions

Step 1

In a large bowl, combine gluten-free all-purpose flour, tapioca starch, xanthan gum, and salt.

Step 2

Gradually stir in boiling water and mix until a dough forms. Allow dough to cool slightly.

Step 3

Add vegetable oil to the dough and knead on a lightly floured surface (using gluten-free flour) until smooth. Cover with a damp cloth and let rest for 15 minutes.

Step 4

For the filling, in a bowl, mix together ground pork, cabbage, green onions, garlic, ginger, tamari, sesame oil, and black pepper until well combined.

Step 5

Divide the dough into small, equal portions (about 1 tablespoon each) and roll each into a ball.

Step 6

On the floured surface, roll each dough ball into a thin circle (about 3 inches in diameter).

Step 7

Place about 1 tablespoon of filling in the center of each dough circle. Moisten the edges with water and fold to seal, crimping the edges as you fold.

Step 8

Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium-high heat. Arrange potstickers in a single layer, seam side up, and cook until the bottoms are golden brown, about 2-3 minutes.

Step 9

Carefully add 1/2 cup water to the skillet and cover immediately. Reduce heat to medium-low and steam for about 8 minutes, or until the water is evaporated.

Step 10

Remove the lid and cook for an additional 1-2 minutes to re-crisp the bottoms.

Step 11

Serve hot with your favorite dipping sauce.
