Ingredients

  • 6 cups Vegetable or chicken broth (ensure gluten-free)
  • 1 whole Bay leaf
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Fresh spinach leaves
  • 0.25 cup Fresh cilantro leaves, chopped
  • 1 whole Lime, cut into wedges

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Add the diced onion and minced garlic; sauté until the onion is soft and translucent, approximately 4-5 minutes.
