Ingredients

  • 350 grams Gluten-free all-purpose flour
  • 100 grams Hazelnut meal (finely ground toasted hazelnuts)
  • 1 teaspoon Xanthan gum
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 50 grams Granulated sugar
  • 80 grams Unsalted butter, softened
  • 250 milliliters Milk, warm (or plant-based milk for dairy-free option)
  • 10 grams Active dry yeast
  • 2 large Eggs
  • 50 grams Hazelnuts, chopped (optional, for topping)

Directions

Step 1

Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.

Step 2

In a small bowl, combine the warm milk and the active dry yeast. Stir well and let it sit for about 5-10 minutes until frothy.

Step 3

In a large mixing bowl, whisk together the gluten-free all-purpose flour, hazelnut meal, xanthan gum, baking powder, salt, and sugar.

Step 4

Add the softened butter to the dry ingredients and mix until the mixture becomes crumbly.

Step 5

Beat the eggs and add them into the yeast mixture; stir well.

Step 6

Create a well in the center of the dry ingredients and pour the milk-yeast-egg mixture into it. Mix until a soft dough forms. The dough will be a bit sticky.

Step 7

Dust a clean surface with some gluten-free flour and knead the dough slightly until it just comes together.

Step 8

Divide the dough into 12 equal portions, shaping each into a ball. Place them on the prepared baking sheet about 2 inches apart.

Step 9

If using chopped hazelnuts as topping, gently press a few pieces on top of each bun.

Step 10

Cover the baking sheet with a clean kitchen towel and allow the buns to rise in a warm place until doubled in size, approximately 30-45 minutes.

Step 11

Bake in the preheated oven for 20 to 25 minutes or until the tops are golden brown.

Step 12

Remove from the oven and let the buns cool slightly before serving. Enjoy your homemade gluten-free hazelnut buns warm or at room temperature.
