Ingredients

  • 2 cups Gluten-free rolled oats
  • 1.5 cups Almond flour
  • 0.75 cup Brown sugar
  • 0.5 cup Coconut oil
  • 0.25 cup Honey
  • 1 teaspoon Vanilla extract
  • 3 cups Fresh mixed berries (or fruit of choice)
  • 2 tablespoons Cornstarch
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.

Step 2

In a large mixing bowl, combine the gluten-free rolled oats, almond flour, brown sugar, and salt. Mix well.

Step 3

Melt the coconut oil in a microwave or over low heat on the stove until just liquid, but not hot.

Step 4

Add the melted coconut oil, honey, and vanilla extract to the dry ingredients and mix until the mixture becomes crumbly and holds together when pressed.
