Ingredients

  • 12 ounces Gluten-free fettuccine
  • 4 ounces Pancetta
  • 4 large Eggs
  • 1 cup Parmesan cheese, grated
  • 2 cloves Garlic, minced
  • 1 teaspoon Black pepper, freshly ground
  • 0.5 teaspoon Salt
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Add the gluten-free fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.

Step 2

While the pasta is cooking, heat a large skillet over medium heat. Add the pancetta and cook until crispy, approximately 5-7 minutes. Remove the pancetta from the skillet and set aside on a paper towel-lined plate.

Step 3

In a medium bowl, whisk together the eggs, grated Parmesan cheese, and freshly ground black pepper until well combined.

Add the minced garlic to the pancetta drippings in the skillet and sauté for about 1 minute until fragrant.
