Ingredients

  • 200 grams dried green lentils
  • 500 ml water
  • 1 medium onion
  • 3 garlic cloves
  • 30 grams fresh parsley
  • 30 grams fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 50 grams gluten-free flour
  • 1 teaspoon baking powder
  • 1 tablespoon lemon juice
  • 3 tablespoons olive oil
  • 2 tablespoons sesame seeds
  • 500 ml vegetable oil

Directions

Step 1

Rinse the lentils under cold water and drain them well. Place them in a medium-sized pot and cover with 500 ml water. Bring to a boil over medium heat, then reduce the heat and simmer for 15-20 minutes or until the lentils are tender but not mushy. Drain and set aside to cool.

Step 2

In a food processor, combine the cooled lentils, chopped onion, peeled garlic cloves, parsley, cilantro, ground cumin, ground coriander, salt, black pepper, and lemon juice. Pulse until the mixture is slightly chunky.

Transfer the lentil mixture to a large mixing bowl and stir in the gluten-free flour, baking powder, and sesame seeds until well mixed. The mixture should hold together when you form it into a ball. If it's too wet, add a little more flour. If it's too dry, add a bit more lemon juice.
