Ingredients

  • 15 oz Canned chickpeas, drained and rinsed
  • 0.5 cup Onion, diced
  • 0.5 cup Fresh parsley, chopped
  • 3 Garlic cloves, minced
  • 0.5 cup Gluten-free oat flour
  • 1.5 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tsp Salt
  • 0.5 tsp Baking powder
  • 0.5 tsp Black pepper
  • 0.25 tsp Cayenne pepper
  • 2 tbsp Olive oil
  • 4 Gluten-free burger buns
  • 4 Lettuce leaves
  • 4 Tomato slices
  • 12 Cucumber slices

Directions

Step 1

In a food processor, combine the chickpeas, onion, parsley, and garlic. Pulse until the mixture is coarsely blended. Do not puree it completely; you want some texture in the mixture.

Step 2

Transfer the chickpea mixture to a bowl. Add the gluten-free oat flour, cumin, coriander, salt, baking powder, black pepper, and cayenne pepper. Mix until all ingredients are well combined.

Step 3

Divide the mixture into 4 equal portions and shape each into a burger patty.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once hot, add the patties and cook for about 3-4 minutes on each side, or until golden brown and heated through. Add more olive oil if needed for the second batch.

Step 5

Meanwhile, toast the gluten-free burger buns (optional), and prepare the toppings: lettuce, tomato, and cucumber slices.

Step 6

Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the falafel patty, tomato slices, cucumber slices, and the top half of the bun.

Step 7

Serve immediately, and enjoy your gluten-free falafel burger!
