Ingredients

  • 1 cup Chickpeas, canned
  • 1 cup Quinoa, cooked
  • 1 medium Carrot, grated
  • 0.5 medium Red onion, finely chopped
  • 2 cloves Garlic, minced
  • 0.5 cup Gluten-free breadcrumbs
  • 0.25 cup Chickpea flour
  • 3 tablespoons Olive oil
  • 1 teaspoon Cumin powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 4 pieces Gluten-free burger buns
  • 4 pieces Lettuce leaves
  • 1 large Tomato, sliced
  • 1 large Avocado, sliced
  • 4 tablespoons Vegan mayonnaise

Directions

Step 1

Drain and rinse the canned chickpeas thoroughly. Mash them in a large bowl using a fork or potato masher until a chunky consistency is achieved.

Step 2

Add cooked quinoa, grated carrot, chopped red onion, minced garlic, gluten-free breadcrumbs, chickpea flour, 2 tablespoons of olive oil, cumin, paprika, salt, black pepper, and chopped parsley to the mashed chickpeas.

Step 3

Combine the ingredients well until a uniform mixture is formed. If necessary, add a little more chickpea flour to bind the mixture.

Step 4

Shape the mixture into 4 equal-sized patties.

Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once the oil is hot, add the patties, and cook them for about 5-6 minutes on each side until they are golden brown and cooked through.

While the patties are cooking, slice the gluten-free burger buns and lightly toast them if desired.
