Ingredients

  • 2 sheets Gluten-Free Puff Pastry Sheets
  • 750 ml Whole Milk
  • 1 teaspoon Vanilla Bean Paste
  • 4 pieces Egg Yolks
  • 80 grams Cornstarch
  • 150 grams Caster Sugar
  • 50 grams Unsalted Butter
  • 2 tablespoons Icing Sugar
  • 1 tablespoon Water (for the icing sugar)

Directions

Step 1

Preheat the oven to 200°C (392°F).

Step 2

Place one sheet of gluten-free puff pastry on a baking tray lined with baking paper. Prick all over with a fork to prevent it from puffing too much. Bake for 10-12 minutes or until golden brown. Repeat with the second sheet. Let them cool completely.

Step 3

In a medium saucepan, heat the milk and vanilla bean paste over medium heat until just boiling, then remove from heat.

Step 4

In a bowl, whisk together egg yolks, cornstarch, and sugar until pale and creamy.

Gradually add the hot milk mixture to the egg mixture, whisking continuously to prevent curdling. Return the mixture to the saucepan.
