Directions

Step 1

Clean the Bangus (milkfish) thoroughly by removing the scales, internal organs, and gills. Rinse the fish well under cold running water.

Split the Bangus from the back to butterfly it. This involves cutting through the backbone from head to tail and flattening the fish. Rinse again and pat dry with paper towels.
