  • 12 ounces gluten-free spaghetti or linguine
  • 2 medium (about 8 oz each) lobster tails
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 2 large shallots, finely chopped
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 pinch red pepper flakes

Directions

Step 1

Begin by cooking the gluten-free pasta according to the package instructions. Once done, drain the pasta, reserving 1 cup of the pasta water, and set it aside.

Prepare the lobster tails by splitting them in half lengthwise. Carefully remove the meat from the shells and cut it into bite-sized pieces.

In a large skillet over medium heat, add the olive oil and 2 tablespoons of the butter. Once the butter has melted, add the lobster pieces and sauté for 2-3 minutes until just cooked. Remove the lobster from the skillet and set aside.
