  • 200 grams Gluten-free all-purpose flour
  • 30 grams Tapioca starch
  • 7 grams Instant yeast
  • 50 grams Sugar
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoon Salt
  • 150 milliliters Whole milk
  • 50 grams Butter
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 50 grams Unsalted butter (for filling)
  • 50 grams Sugar (for topping)
  • 2 tablespoons Coffee instant powder
  • 2 tablespoons Hot water
  • 2 tablespoons Rice flour (for dusting)

Directions

Step 1

In a large bowl, combine gluten-free all-purpose flour, tapioca starch, instant yeast, sugar, xanthan gum, and salt.

Heat the milk until warm (not hot), then add the butter into the milk and stir until it melts. Let cool slightly.

Beat the egg with vanilla extract in a separate bowl.

Combine the wet ingredients with the dry ingredients and mix until a smooth dough forms.
