Ingredients

  • 500 grams fresh cod fillets
  • 120 grams gluten-free all-purpose flour
  • 1 teaspoon baking powder
  • 1 unit large egg
  • 120 milliliters milk
  • 2 units green onions, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 cloves garlic, minced
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon lemon zest
  • 250 milliliters vegetable oil, for frying

Directions

Step 1

Place the fresh cod fillets in a pot with enough water to cover. Bring to a simmer over medium-high heat. Reduce the heat to low and poach the cod for about 5-7 minutes until it flakes easily with a fork. Remove the cod from water and let it cool slightly.

Step 2

Flake the cod with a fork into a mixing bowl. Discard any skin or bones.

Step 3

In a large mixing bowl, whisk together the gluten-free all-purpose flour, baking powder, cayenne pepper, salt, and black pepper.

Step 4

Add the egg and milk to the flour mixture, and whisk until smooth, creating a batter.

Step 5

Add the flaked cod, chopped green onions, fresh parsley, minced garlic, and lemon zest to the batter. Stir gently until all ingredients are evenly combined.

Step 6

In a large skillet, heat the vegetable oil over medium heat until it reaches 180°C (350°F).

Step 7

Carefully drop spoonfuls of the batter into the hot oil, flattening each fritter slightly with the back of the spoon. Fry in batches to avoid overcrowding, about 3-4 minutes on each side, or until golden brown and crispy.

Step 8

Use a slotted spoon to transfer the fritters onto a plate lined with paper towels to drain excess oil.

Step 9

Serve the cod fritters warm, with a side of lemon wedges or your favorite dipping sauce.
