Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
If using, mix the cinnamon with the granulated sugar in a small bowl, setting it aside for later use.
Sprinkle half of the sugar mixture evenly over a clean work surface. Lay the gluten-free puff pastry sheet on top of the sugared surface.
Sprinkle the remaining sugar mixture evenly on top of the puff pastry sheet. Press gently with a rolling pin to help the sugar stick and evenly distribute.
Fold the two longer edges of the pastry into the center, leaving a small gap in between. Press lightly to flatten.
Fold each long edge again into the center, until they meet. Press down gently.
Fold one half over the other, creating a log shape. Press lightly and wrap the log in plastic wrap. Chill in the fridge for about 10 minutes.
Remove the chilled pastry from the fridge and slice it into 1/4-inch thick pieces.
Place the slices cut side up on the prepared baking sheet, allowing space between each piece for expansion.
Bake in the preheated oven for about 15-20 minutes, or until golden brown and caramelized. Flip halfway through to ensure even caramelization.
Remove the palmiers from the oven and let them cool on a wire rack before serving.
