Ingredients

  • 500 grams Potatoes
  • 400 grams Salmon fillets
  • 100 grams Gluten-free breadcrumbs
  • 2 Green onions
  • 2 tablespoons Fresh parsley
  • 1 Egg
  • 1 Lemon
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Olive oil

Directions

Step 1

Peel and chop the potatoes into uniform chunks. Boil in a large pot of salted water for 15 minutes or until soft.

Step 2

While the potatoes are boiling, prepare the salmon fillets. Remove any skin if necessary. Place the salmon in a shallow pan, cover with water, and bring to a simmer. Cook for 10 minutes, or until cooked through and flaky. Remove from water and set aside to cool.

Once the potatoes are soft, drain them and return to the pot to steam off excess moisture. Mash thoroughly until smooth and set aside to cool slightly.

Finely chop the green onions and parsley.
