Ingredients

  • 2 cups Gluten-free all-purpose flour blend
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 2 teaspoons Ground cinnamon
  • 0.75 cup Granulated sugar
  • 0.25 cup Brown sugar, packed
  • 2 large Eggs
  • 0.5 cup Unsweetened applesauce
  • 0.5 cup Unsalted butter, melted
  • 1 teaspoon Vanilla extract
  • 0.5 cup Milk (dairy or non-dairy)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease with a gluten-free non-stick spray.

Step 2

In a large bowl, whisk together the gluten-free all-purpose flour blend, baking powder, baking soda, salt, and ground cinnamon until well combined.

Step 3

In a separate medium bowl, mix together the granulated sugar, brown sugar, eggs, applesauce, melted butter, vanilla extract, and milk until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and gently stir with a wooden spoon or spatula until just combined. Be careful not to overmix; the batter may be a little lumpy, but that's okay.

Step 5

Evenly distribute the batter among the prepared muffin cups, filling them about three-quarters full.

Step 6

Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 7

Remove muffins from the oven and let them cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.

Step 8

Enjoy your delicious, fluffy gluten-free cinnamon muffins fresh, or store in an airtight container at room temperature for up to three days.
