Ingredients

  • 3 cups Gluten-free rolled oats
  • 1 cup Raw almonds, chopped
  • 1 cup Raw pecans, chopped
  • 0.5 cup Unsweetened shredded coconut
  • 1 tablespoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Coconut oil, melted
  • 0.5 cup Pure maple syrup
  • 1 teaspoon Vanilla extract
  • 0.5 cup Dried cranberries
  • 0.5 cup Dried apricots, chopped

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.

In a large mixing bowl, combine the gluten-free rolled oats, chopped almonds, chopped pecans, shredded coconut, ground cinnamon, and salt. Mix these dry ingredients thoroughly.

In a separate smaller bowl or measuring cup, mix the melted coconut oil, pure maple syrup, and vanilla extract together until well combined.
