Ingredients

  • 250 grams Unsalted butter
  • 200 grams Dark chocolate (70% cocoa)
  • 200 grams Brown sugar
  • 100 grams Caster sugar
  • 2 teaspoons Vanilla extract
  • 4 Large eggs
  • 100 grams Gluten-free plain flour
  • 50 grams Cocoa powder
  • 1 teaspoon Baking powder
  • 100 milliliters Milk

Directions

Step 1

Preheat your oven to 160°C (320°F). Grease and line a 9-inch round cake pan with baking parchment.

Step 2

In a heatproof bowl over a saucepan of simmering water, melt the butter and dark chocolate together. Stir occasionally until fully melted and smooth.

Step 3

Remove from heat and let cool slightly. Stir in the brown sugar, caster sugar, and vanilla extract into the chocolate mixture until well combined.

Step 4

Add the eggs one at a time, beating well after each addition until the mixture is smooth.

Step 5

Sift together the gluten-free plain flour, cocoa powder, and baking powder in a separate bowl.

Step 6

Gradually add the dry ingredients to the chocolate mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined and the batter is smooth.

Step 7

Pour the batter into the prepared cake pan and smooth the surface with a spatula.

Step 8

Bake in the preheated oven for about 60 minutes, or until a skewer inserted into the center of the cake comes out mostly clean with just a few moist crumbs.

Step 9

Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 10

Once cooled, slice and serve as desired.
