Ingredients

  • 12 oz Gluten-free pasta
  • 1 lb Boneless, skinless chicken breast
  • 2 tbsp Olive oil
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 14.5 oz Canned diced tomatoes
  • 2 tbsp Tomato paste
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Grated Parmesan cheese
  • 0.25 cup Fresh basil leaves, for garnish

Directions

Step 1

Bring a large pot of salted water to a boil. Add the gluten-free pasta and cook according to package instructions until al dente. Drain and set aside.

Step 2

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 3

Slice the chicken breast into small bite-sized pieces and season with salt and pepper.

Step 4

Add the chicken to the skillet and cook for 6-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.

Step 5

In the same skillet, add the remaining tablespoon of olive oil.

Step 6

Add the chopped onion and cook for about 3 minutes or until softened.

Step 7

Stir in the minced garlic and cook for another 30 seconds, or until fragrant.

Step 8

Add the canned diced tomatoes (with their juices) and tomato paste to the skillet.

Step 9

Stir in the dried oregano, dried basil, salt, and black pepper.

Step 10

Bring the mixture to a simmer and let cook for about 10 minutes, stirring occasionally, until the sauce thickens slightly.

Step 11

Return the cooked chicken to the skillet, stirring it into the sauce. Let it heat through for 2-3 minutes.

Step 12

Add the cooked pasta to the skillet, tossing to coat the pasta evenly with the sauce.

Step 13

Sprinkle grated Parmesan cheese over the pasta and toss again to incorporate.

Step 14

Serve the pasta hot, garnished with fresh basil leaves.
