Ingredients

  • 500 g Chicken, boneless and skinless, cut into pieces
  • 2 tbsp Coconut oil
  • 2 medium Red onions, finely chopped
  • 4 pieces Garlic cloves, minced
  • 1 tbsp Ginger, grated
  • 2 pieces Green chilies, slit
  • 2 medium Tomatoes, finely chopped
  • 10 leaves Curry leaves
  • 0.5 tsp Turmeric powder
  • 1 tsp Coriander powder
  • 0.5 tsp Cumin powder
  • 1 tsp Red chili powder
  • 1 tsp Garam masala
  • 2 tbsp Fresh coriander leaves, chopped
  • 1 tsp Salt
  • 0.5 cup Water

Directions

Step 1

Heat coconut oil in a large pan over medium heat.

Step 2

Add finely chopped onions and sauté until they turn translucent.

Step 3

Stir in the minced garlic, grated ginger, and slit green chilies. Cook for about 2 minutes until the aromas are released.

Add chopped tomatoes and curry leaves to the pan. Cook until the tomatoes become soft and the mixture thickens.

Sprinkle turmeric powder, coriander powder, cumin powder, red chili powder, and salt over the mixture. Stir well to combine the spices.
