Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 1 teaspoon Xanthan gum
  • 1 teaspoon Salt
  • 0.5 teaspoon Baking powder
  • 0.75 cup Warm water
  • 2.5 tablespoons Vegetable oil
  • 1 cup Cooked chicken breast, shredded
  • 0.5 cup Frozen peas, thawed
  • 0.5 cup Carrot, finely diced
  • 0.5 cup Red onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 teaspoon Ginger, minced
  • 1.5 teaspoons Curry powder
  • 1 teaspoon Garam masala
  • 2 tablespoons Cilantro, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 3 cups Oil for frying

Directions

Step 1

In a large bowl, combine gluten-free all-purpose flour, xanthan gum, salt, and baking powder. Mix well.

Step 2

Add warm water and vegetable oil to the flour mixture, and knead to form a smooth dough. Cover the dough with a damp cloth and let it rest for 20 minutes.

In a pan over medium heat, add a tablespoon of vegetable oil. Sauté the red onion until translucent, about 3 minutes.

Add garlic and ginger to the onions, stirring constantly until fragrant.

Stir in carrots, peas, shredded chicken, curry powder, garam masala, salt, and black pepper. Cook until the vegetables are tender and flavors are well combined, about 5 minutes.

Divide the dough into 8 equal portions. Roll each portion into a ball and then into a thin oval shape.

Fill the cone with 1-2 teaspoons of the chicken filling. Seal the opening with a little water and press firmly to ensure it's tightly sealed.

Heat oil for frying in a deep pan over medium heat. Once hot, gently slide in the samosas, a few at a time, and fry until golden brown and crispy, about 3-4 minutes on each side.

Remove the fried samosas with a slotted spoon and drain on paper towels. Serve hot.
