Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 0.5 cup gluten-free all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 0.75 cup chicken broth
  • 0.25 cup fresh lemon juice
  • 2 tablespoons capers
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Place each chicken breast between two sheets of plastic wrap. Using a meat mallet, gently pound the chicken to an even thickness of about 1/2 inch.

On a plate, combine the gluten-free flour, salt, and black pepper.

Dredge the chicken breasts in the flour mixture, shaking off any excess.
