Ingredients

  • 1 pound boneless skinless chicken breast
  • 15 ounces canned sweet corn
  • 4 cups gluten-free chicken broth
  • 2 cups water
  • 1 large carrot
  • 2 celery stalks
  • 1 medium onion
  • 3 cloves garlic
  • 2 tablespoons gluten-free soy sauce
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon salt
  • 0.25 cup fresh cilantro
  • 2 tablespoons olive oil
  • 2 tablespoons cornstarch
  • 0.25 cup water

Directions

Step 1

Cut the chicken breast into small, bite-sized pieces.

Step 2

Dice the carrot and celery stalks, and finely chop the onion and garlic.

Step 3

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté for about 3 minutes until the onion is translucent.

Step 4

Add the diced carrot and celery to the pot, and sauté for an additional 5 minutes.

Step 5

Add the chicken pieces to the pot and cook until lightly browned on all sides, about 5 minutes.

Step 6

Pour in the gluten-free chicken broth and 2 cups of water, then add the canned sweet corn, including the liquid.

Step 7

Stir in the gluten-free soy sauce, ground black pepper, and salt. Bring the soup to a boil.

Step 8

Once boiling, reduce the heat to low and let the soup simmer for 15 minutes or until the chicken is fully cooked and the vegetables are tender.

Step 9

In a small bowl, mix the cornstarch with 1/4 cup of water to make a slurry. Slowly add the slurry to the soup, stirring continuously to thicken.

Step 10

Taste the soup and adjust the seasoning if necessary. Stir in the chopped fresh cilantro just before serving.

Step 11

Serve hot, and enjoy the rich flavors of your gluten-free chicken corn soup.
