Ingredients

  • 250 g Gluten-free all-purpose flour
  • 1 tsp Xanthan gum
  • 150 ml Milk
  • 50 g Butter
  • 50 g Caster sugar
  • 1 large Egg
  • 0.5 tsp Salt
  • 7 g Dried active yeast
  • 75 g Raisins
  • 75 g Currants
  • 50 g Brown sugar
  • 1 tsp Ground cinnamon
  • 50 g Icing sugar
  • 2 tbsp Water

Directions

Step 1

In a small saucepan, gently heat the milk and butter until the butter is melted. Let it cool until lukewarm.

Step 2

In a large mixing bowl, combine the gluten-free flour, xanthan gum, caster sugar, and salt.

Step 3

In a small bowl, whisk the egg and then stir it into the lukewarm milk and butter mixture.

Step 4

Make a well in the dry ingredients and pour in the liquid mixture along with the yeast. Stir until everything is well combined into a smooth dough.

Step 5

Cover the bowl with a clean tea towel and leave the dough to rise in a warm place for around 1 hour or until doubled in size.

While the dough is rising, prepare the filling. In a small bowl, mix the raisins, currants, brown sugar, and cinnamon together.

Once risen, gently deflate the dough and transfer it to a lightly floured surface. Roll it out into a rectangle about 30 cm by 20 cm.

Spread the dried fruit mixture evenly over the dough. Starting from the long side, tightly roll up the dough into a log shape.

Cut the roll into 8 equal pieces and place them cut side up into a greased baking dish, leaving some space between each piece for spreading.

Cover the dish with the tea towel again and let it rise for another 30 minutes.

Preheat your oven to 180°C (350°F). Bake the buns for 20-25 minutes, or until golden brown.

Step 12

Remove from the oven and let cool slightly. Mix the icing sugar with water to form a smooth glaze and drizzle over the warm buns before serving.
