Ingredients

  • 180 grams Gluten-free all-purpose flour
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoon Salt
  • 120 grams Butter, unsalted and cold
  • 150 grams Sharp cheddar cheese, shredded
  • 30 grams Parmesan cheese, grated
  • 1 Egg yolk
  • 60 milliliters Cold water
  • 1 Egg wash (1 egg mixed with 1 tablespoon of water)
  • 15 grams Sesame seeds (optional)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the gluten-free all-purpose flour, xanthan gum, and salt.

Step 3

Cut the cold butter into small cubes and add it to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.

Add the shredded cheddar cheese and grated parmesan cheese into the mixture, stirring until well combined.

In a small bowl, whisk the egg yolk and 60 milliliters of cold water. Gradually add this liquid to the flour mixture, stirring until the dough comes together.
