Ingredients

  • 8 pieces Gluten-free corn tortillas
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 2 cups Gluten-free enchilada sauce
  • 2 tablespoons Olive oil
  • 2 tablespoons Chopped fresh cilantro, for garnish
  • 2 tablespoons Sliced green onions, for garnish
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Ground black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a medium-sized bowl, combine the shredded cheddar cheese and Monterey Jack cheese. Mix well and set aside.

Step 3

In a skillet over medium heat, warm the olive oil. Add the gluten-free tortillas one at a time for about 20 seconds per side, until they are pliable but not crispy. This helps to prevent cracking when rolling.

Step 4

Spread 1/2 cup of the gluten-free enchilada sauce evenly on the bottom of a 9x13-inch baking dish.

Step 5

Place approximately 1/4 cup of the cheese mixture in the center of each tortilla. Roll the tortillas tightly and place them seam side down in the prepared baking dish.

Step 6

Pour the remaining enchilada sauce over the rolled tortillas, ensuring each enchilada is fully covered with sauce.

Step 7

Sprinkle the remaining cheese mixture evenly over the top of the enchiladas.

Step 8

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Step 9

Remove from the oven and let them cool for a few minutes.

Step 10

Garnish with chopped fresh cilantro and sliced green onions.

Step 11

Serve warm and enjoy!
