Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 0.5 cup Tapioca flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Xanthan gum
  • 1 cup Warm water
  • 2.25 teaspoons Instant yeast
  • 2 tablespoons Olive oil
  • 1 tablespoon Honey
  • 2 Eggs
  • 1 cup Shredded cheddar cheese
  • 1 tablespoon Sesame seeds (optional)
  • 4 cups Water for boiling

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the gluten-free all-purpose flour, tapioca flour, baking powder, salt, and xanthan gum. Whisk until well combined.

Step 3

In a separate small bowl, mix the warm water, instant yeast, olive oil, and honey. Let it sit for about 5 minutes until foamy.

Step 4

Beat the eggs in a separate bowl, then add them to the yeast mixture.

Step 5

Pour the wet ingredients into the dry ingredients, stirring until the dough begins to come together. It will be slightly sticky.

Step 6

Fold in 3/4 cup of the shredded cheddar cheese, reserving 1/4 cup for topping.

Step 7

Divide the dough into 8 equal portions and shape each into a ball. Flatten slightly, then use your thumb to make a hole in the center of each to form a bagel shape.

Step 8

Bring a large pot with 4 cups of water to a boil.

Step 9

Once boiling, reduce the heat to a simmer and gently place each bagel into the water, one at a time. Boil for about 1 minute on each side.

Step 10

Remove the bagels from the water using a slotted spoon and place them on the prepared baking sheet.

Step 11

Sprinkle the top of each bagel with the remaining cheddar cheese and optional sesame seeds.

Step 12

Bake in the preheated oven for 20-25 minutes, until the bagels are golden brown and the cheese is melted and bubbling.

Step 13

Remove from the oven and allow to cool slightly before serving. Enjoy your gluten-free cheese bagels warm or toasted!
